Sweet Potato and Raspberry Brownie

I feel like the luckiest duck in the pond to be surrounded by such health conscious, kind and loving friends. Mikaela Mason is a nutrition student, owner and founder of Oasis Skin Co, and also happens to be one of my b e s t e s t friends ever!!

Both Willis and I are HUGE fans of Mikaela’s Sweet Potato and Raspberry Brownie’s. Containing only 100% pure and natural ingredients, these bad boys are seriously off-the-chain good.

There is no doubt in my mind that you won’t be WOWING your friends with this gooey deliciousness. Such perfect timing for the Easter celebrations too…woop woop!!!


Sweet Potato and Raspberry Brownies 


( Gluten Free // Dairy Free // Refined Sugar Free // Totally Addictive )

The Ingredients

2 medium–large sweet potatoes (about 560g)

14 Medjool Dates, pitted

Âľ cup + 2tbsp Almond Meal

Âľ cup + 1 tbsp Buckwheat Flour

6 tbsp Raw Cacao Powder

4 tbsp Maple Syrup

1 pinch good quality salt

1 tsp Vanilla

4 tbsp Cacao Nibs

1 cup Frozen Rasperries

The Method

1.Pre-heat fan-forced oven to 180

2.Peel and roughly cut the sweet potatoes into rough chunks and place in a steamer for about 20 minutes, until it is soft.

3.Once the sweet potato is cooked and falling apart, remove from the steamer and place in a blender with the dates, maple syrup and vanilla. Blend until smooth and creamy.

4.Place the remaining ingredients (except the raspberries) in a mixing bowl and stir. Form a well in the centre of the dry ingredients and tip in the sweet potato and date mixture. Mix well.

5.Once mixed through, put in the raspberries and give another light stir so they are evenly through the mix.

6.Place the mixture in a baking paper lined baking tray and bake for 25 minutes or until a pierced knife comes out clean.

7.Remove the brownie from the oven, and allow to cool for 20 minutes to allow the slice to set (this is really important). After 20 minutes cut into pieces and enjoy.

Note: This is a moist brownie so best stored in the fridge (unless you plan on eating them all in one day…which is pretty easy to do I must say he he)
